I don't like soft cheeses like Brie, but I usually have some form of Swiss in the refrigerator (usually Jarslberg). ::pedant mode:: Jarlsberg is actually Norwegian. Similar mountains but further north. ::mode::

Perhaps I'm the only one here... I like all cheeses. Including those "pasteurized process" etc. Even that EZ Cheese, though I can't eat much of that anymore now that I have to keep my weight down.
No, I don't see American cheese as "real" cheese. I just think it tastes good, especially melted on a sandwich or burger.

I think the Kraft Singles though are waxy. But, even they will do in a pinch and they melt. I also like Velveeta!

Kraft Deli Deluxe is a mild cheddar American cheese. Kraft Singles is processed cheese food, which is a little bit of American cheese and a lot of emulsifiers (oil). Velveeta today is cheese flavorings and hell of a lot of emulsifiers.

We get real cheddar (Medium I believe) slices at Costco here. No fake cheese here with the occasional exception being Doritos Queso!

In our fridge, we have Manchego, Iberico, Asiago, Romano, Parmesan, mozzarella, provolone (Pecorino Toscano Stagionato), sharp cheddar, Swiss, Jarlsberg, feta, bleu, and probably a few others I don’t recall at the moment. Some are domestic, some are imported.... we like cheeses, alone or with fruits, bread, and wine.

Red Leicester makes a great grilled cheese sandwich. It has a low melting point and a nutty flavor.
